Friday's Favorite Farm Recipe

We are now into Day 5 of the planting season.  It has been a good week so far.  The seed warehouse and office have been my domain this entire time so I have not had the opportunity to highlight any great recipes for this week.  Any one who knows Joe and Suzanne knows that in the spring just about everything other than planting is put on hold.

    Lower Fat Banana Bread
    2 eggs
    2/3 C. sugar
    2-3 ripe bananas, mashed
    1/4 C. applesauce
    1/3 C. milk
    1 TB. Oil
    1 TB. Vanilla
    1 3/4 C. Flour
    2 tsp. baking powder
    1/2 tsp. soda
    1/2 tsp. salt

    Preheat oven to 325 degrees. Beat eggs & sugar until light & fluffy. Mix in bananas, milk, applesauce, oil & vanilla. Sift dry ingredients together and stir into banana mixture. Mix just until blended. Pour into 1 large or 2 small bread pans and bake for 1 hour.
